Acorn Restaurant Pancake Mix Description
Vegan and organic pancake mix from a local Vancouver restaurant.
Ingredients: Organic red spring flour, baking soda, baking powder, Vancouver Island sea salt, and organic fair trade cane sugar.
Cooking Instructions
1) Add 1 cup of dry pancake mix to a large mixing bowl, followed by 1/2 soy milk and a 1/4 cup of soda water (flat is fine if that's all you have).
2) Whisk all those ingredients together until smooth. If you chose the chocolate chip option, add them now and stir in with a spatula.
3) In a non-stick or cast iron skillet, add approximately 1/4 cup of pancake batter to well oiled or buttered pan.
4) Wait for small bubbles to appear on top, then flip. Give it a minute and you're done! Don't be afraid of heat - dark edges are nice to have and will keep some crisp to the pancakes!
